Study the Science of Food
Nutrition plays a critical role in human health, from growth and development to disease prevention and overall well-being. In a world where ultra-processed foods are increasingly common, understanding nutrition has never been more important. Studying nutrition at CBU introduces students to the science of how nutrients from food affect health and well-being throughout every stage of life. Students will explore the fundamentals of nutritional science including nutrients, their functions, dietary sources and how the body processes and uses them. Nutrition coursework also examines the history of human nutrition and the social, psychological and economic factors that affect it. Additional topics include health promotion, disease and disease prevention, metabolism, nutritional biochemistry and sport nutrition.
Studying at CBU provides a unique environment to explore nutrition and its interrelatedness with economics, health and culture in a region where the connections between diet, healthy aging and chronic disease can be seen firsthand. With a growing senior population and many communities facing barriers to food access and healthy eating, students gain broad knowledge and overall insight into the real-world nutritional challenges that affect individuals, families and communities. This context helps students understand how nutrition can support healthy aging, prevent chronic disease and improve quality of life.
CBU offers students the opportunity to complete the first years of study in Nutrition before pursuing a nutrition degree at another accredited university. Alternatively, many CBU students choose to take a Bachelor of Arts in Community Studies degree with a major in Sport and Physical Activity Leadership and a minor in Nutrition.
