Job Title:  Line Cook

Department:  MTCC – Kitchen

Reports To:  Executive Chef

The Membertou Trade and Convention Centre (MTCC)’s Kitchen Team is responsible for preparing food for guest consumption in Kiju’s Restaurant and for MTCC catered banquets and events.  As a Line Cook, you may be assigned to work in one or both of these areas depending upon your skillset, experience, and business requirements.

 Primary Duties & Responsibilities:

  • Prepare food for guest consumption at Kiju’s Restaurant and MTCC Catering.
  • Ensure that food is prepared in a timely manner as specified by management.
  • Check the MTCC Catering function board (if you are assigned to a catering shift) to ensure that food will be prepared at the time specified.
  • Ensure that all food is fresh and presented in an appetizing manner according to MTCC specifications.
  • Consistently monitor for proper food storage and kitchen cleanliness.
  • Responsible for proper food handling such as, storage and rotation. All food must be labelled, dated and securely packaged.
  • Responsible for following menu rotation and specifications as presented by MTCC.
  • Assist with controlling food costs by ensuring that food waste is kept to a minimum and that food goes out to the customers to specification every time.
  • Responsible for a proper clean down after each shift.
  • Ensure that work area is clean and sanitized before finishing each shift and when you use the following pieces of equipment you are required to clean them: slicer, char broiler, griddle, work table both above and below, soup kettles and refrigerators.
  • Remove any used cutting boards or other materials before the end of each shift.
  • Responsible to clean assigned section thoroughly once per week.
  • Responsible to organize the produce, general prep, freezer and reach-in refrigerator on a regular basis.
  • Report any problems to the Restaurant Chef, Banquet Chef or Executive Chef on duty.
  • All duties common to a Line Cook and any related duties that may be assigned by management.
  • Responsible for creating a positive guest experience. Smile and be helpful and friendly.
  • Must be courteous and professional toward guests and co-workers.
  • Promote inter-department unity by building and maintaining relationships with team members and dining room staff.
  • Must be well groomed and appropriately dressed as per policy.
  • Adhere to all company policies.
  • Required to report any incidents, such as theft, injuries, etc.
  • Adhere to the Building Fire Procedure and evacuation plan.
  • Adhere to all Food Safety handling regulations.
  • Adhere to all Health and Safety rules and regulations.

  Other Responsibilities

  • Maintain positive relationships with Membertou’s Internal and External Customers, ensuring transactions or information received on behalf of the Band and/or its members are kept confidential.
  • Maintain and improve Membertou’s Quality Management System as it relates to job related duties and/or department.
  • Other department related duties as required by the Director.

 Skills & Qualifications:

  • Post-Secondary culinary training would be an asset.
  • Minimum 2 years of experience working in a fast paced kitchen environment is preferred.
  • Food Handling Safety and WHMIS certifications required.
  • Must be willing to work flexible hours, including days, evenings, weekends and holidays.
  • Strong interpersonal and communication skills as well as a keen eye for detail are essential.
  • Ability to lift up to 25kg.
