Kitchen Steward

DEPARTMENT: Kitchen REPORTS TO: Executive Chef

POSITION SUMMARY: The Kitchen Steward is to operate all dish washing equipment; to sanitize kitchen equipment, dishes, pots, pans, glasses, cutlery, etc.

ACCOUNTABILITIES: The Kitchen Steward is responsible for maintaining a high standard of sanitization of all kitchen equipment and for keeping breakage to a minimum.

DUTIES & FUNCTIONS

· Approach all encounters with guests and employees in a friendly, service-oriented manner

· Maintain regular attendance in compliance with Liscombe Lodge Resort standards, as required by scheduling which will vary according to the needs of the hotel

· Maintain high standards of personal appearance and grooming, which include wearing the proper uniform and name tag when working

· Comply at all times with standards and regulations to encourage safe and efficient hotel operations

· Assume daily responsibilities according to schedule and business needs

· Maintain cleanliness of kitchen areas

· Wash all dishes, pots, pans, glasses and cutlery according to proper standards

· Hand was pots and pans as needed

· Operate all equipment being used in the proper manner

· Thoroughly clean and wash all kitchen equipment, hoods, store rooms, hallways, machines, floors and walk ins

· Empty trash and wash cans

· Comply with all loss prevention guidelines

· Report any faulty equipment immediately

· Store clean items in their designated areas

· Arrange kitchen equipment once cleaned in their designated areas

· Set up working areas as required or requested

· Set up utensils as required or requested

· Report any shortages to your department manager

· Insurance compliance with all sanitation regulations and department guidelines and regulations

· Keep immediate supervisors fully informed of all challenges or matters requiring his/her attention

· Sweep, mop, wash down tables, wash dishes and general cleaning to ensure a clean and sanitary work place

· All other duties as required

All employees are to be constantly on the alert for any unsafe or unsecured areas which may threaten the wellbeing of guests or fellow employees or the maintenance and security of the hotel property and react accordingly. All concerns must be reported to your immediate supervisor.

This hotel functions 7 days a week, 24 hours a day. All employees must realize that we schedule as business dictates.
