Steward – Culinary

Role Summary

Reporting to the Lead Steward and the Culinary leadership team, this position is responsible for
washing dishes, cleaning all areas and properly disposing of recycling and garbage.


• Operating cleaning equipment and tools, including hand wash stations, dish washing machine,
pot-scrubbing station and garbage

• Wash and disinfect kitchen area

• Empty and maintain garbage and dumpster area

• Break down cardboard boxes and place them in the recycle bin

• Dispose of glass in the proper containers

• Clean kitchen tools and equipment, restaurant, dining rooms, ceiling, walls, floors, vents
and food storage areas

• Clean and maintain loading dock, storage and stock area

• Visually inspect tools, equipment or machines to identify defects

• Report maintenance issues immediately to appropriate personnel

• Compliance with all safety regulations of assigned tasks, and ensure a clean and safe working
environment with active participation in the health and safety program

• Adhere to all environmental policies and programs as required

• Other duties as assigned


• Understanding of the use and maintenance of kitchen dish room equipment

• Knowledge of basic sanitation controls and purpose and use of cleaning supplies

• Knowledge of Marriott sanitation standards, food handling safety and sanitation procedures

Working Conditions

• Must be able to work flexible hours including days, evenings, weekends and holidays

• Required to move, lift, carry, pull and place objects weighing less than or equal to 50
pounds without assistance

• Stand, sit or walk for an extended period of time or for an entire shift

• Move up and down stairs and/or service ramps

• Reach overhead and below the knees, including bending, twisting and pulling

• Move over sloping, uneven or slippery surfaces
